Get some aggression out while preparing this healthy main dish by flattening the chicken. Good with steamed vegetables and rice as sides.
2 boneless, skinless chicken breast halves
Salt, freshly ground pepper
Flour
Olive oil
Reduced-sodium chicken broth
Juice of 1 orange
With chicken between sheets of plastic wrap, use rolling pin or meat tenderizer to pound until about 1/2 inch thick. Season chicken with salt and pepper then coat in flour. Heat oil on medium-high in skillet. Add chicken and cook 4 minutes on each side. Add broth and orange juice to pan and cook another 4 minutes. Serve chicken with sauce drizzled over it.
