Kristin's Chocolate Chip Pumpkin Bread
Dry Ingredients:
2 c wheat flour
1 1/2 c white flour
2 1/2 c sugar
2 tsp baking soda
1 1/2 tsp salt
1 1/2 tsp cinnamon
1 1/2 tsp nutmeg
1 1/2 c mini semi-sweet chocolate chips
Wet Ingredients:
4 eggs (or 1 cup egg whites)
1 c applesauce
2/3 c water
2 c canned pumpkin (15 oz can is a little short but works)
1. Combine dry ingredients in large mixing bowl (except chocolate chips). Mix well.
2. In separate bowl beat eggs with a fork and add remaining wet ingredients. Stir well.
3. Add wet ingredients to dry ingredients gradually. Stir until evenly mixed.
4. Fold in chocolate chips.
5. Pour half of mixture into each of two bread pans coated with cooking spray.
6. Bake at 350 degrees for 60 minutes or until a toothpick inserted in the center comes out clean.
